The issues are that the Mundo has a 14mm axle, and horizontal racks that sit about 35mm below that. She may be able to leave the H racks off until she gets the kiddie seat. That would only leave the oversized axle to deal with.
The Burley flex connector fits on most
round and
square bar trailer tongues. The
Burley forged hitch, which is made to go with the flex connector, fits over a regular skewer and a BMX sized axle (ie, 14mm). I've used mine on my Kona (regular skewer) and my Raleigh 20 with the Sturmey Archer 8 spd hub with the 14mm axle.
