They look like good bikes for the type of riding you want to do. Good manufacturers- good specs and it looks like you have an LBS that has sussed your needs for what you want to do.

Now begins the problem--Saddle time is what you need but in a few days your butt will not be saying that. You will discover a few items to add to the bikes like Pumps- and a basic toolkit like a multi-tool and puncture repair kits to put in a small "Wedge" under the saddle. Then there is the cafe. You are going to have to find that. Just far enough away to say that it is worth riding to and it has to have a selection of Pie to keep you going back.

Good choice on the bikes and welcome to the fold.
