I don't have an expert answer, but I've noticed the same thing myself. Here are a few things that I think make it worse:
1. Hot weather.
2. Long difficult climbs.
3. High cadence.
4. Full stomach.

I would also try eating a simple sugary meal when you get that sensation and see if the sensation goes away. If it does, this might be the way you feel a bonk.
