When you watch these old videos, notice how everyone rides the drops almost all the time when the pace is on.
Two reasons:
1) Stems were much higher
2) Hoods were much lower
If you notice, in modern races, most people ride the drops almost all the time. If you notice, in the film, most of the guys have pretty flat backs. Aerodynamics hasn't changed since the 70's.

I'll bet there were posers back in '75 as well who never got down in the drops of a 10 speed.
