I am drawn to the classic look of the polished rims but black or gray (MA40, eg) would probably be more period correct for a mid 80s paramount. I think original wheels were campy tubular rims in black. I have the hubs currently built into gray 80s Campy clincher rims, but one got taco'd in an accident. I now have one campy rim and one hub built into an old MA40 hoop so they look similar (different labels, both gray). But neither rim is in great shape and the MA40 has a flat spot. What I do want is the classic box rim look, whether I to polished silver or black.
