Nice ride...you'll get there. I'm about to go through the same agony. Been over 25yrs since I was riding regularly, also 6'5" and 270 here. Waiting on my Surly Ogre build to be finished off and hoping the frame will fit reasonably well.
What size frame did you end up going with (what's your inseam)? I went with a 61cm and when I picked it up I thought it was going to be too big but so far it's pretty comfortable, making the adjustments suggested on these forums.
