I think rather than a shop you need to find a C&V passionate employee/mechanic. When I was living in NJ I was referred to a shop to have wheels built. I ran into Stanley who was just as passionate as any of us. He built some great wheels, did remarkable jobs pressing in some headset, and spreading some frames.
