Bags/packs/hydration for a bike I don't want to clutter up?

My main commuter is a Kilo TT Stripper SS/FG. I love that bike. Changed the wheels to something lighter, but basically stock. Added headlight & tailight for commuting. I use a Chrome brand messenger bag to carry my stuff to work.

Anyways, long distance casual rides are becoming a fascination to me. My Windor Tourist is all decked out with racks, fenders. bags, etc. But I want to simply through a leg over the Kilo, maybe a hydration pack and just go!!

I am interested in the Profile Designs water bottle cages that clamp to the seatpost, and maybe a small triangle frame bag or stem bag. Any suggestions? I am not wild about using a backpack.
