I ride with my seat in a similar position to yours since I prefer a slightly "large" frame to get less drop from seat to bars so I have my seatpost on the low side. I do have my seat nose tilted down about 1 degree, since I've always done that and it makes it easier to mount. I've never noticed an issue with popping off to bunny hop, or remounting after a barrier. I think a lower seat is going to hurt your pedaling more than it will help your handling, although a different shape seat might be worth a try.
