Tire recommendation for 26" XC riding.

I am piecing together my 1996 specialized stumpjumper M2 frame and need some tire recommendations. The terrain will be mostly dirt single track that is fairly rooty with some leaf cover, but not all that loose. It gets ridden a lot so the dirt gets pretty packed down. Not too much mud since the locals prefer you don't bike it when it is really wet...apparently there is erosion and rutting issues. I will also be riding a trail system that has packed fine gravel like some of those rails to trails routes, but very twisty and hilly and no roots. I haven't been shopping for mountain bike tires since about 2001 so I don't know what is good and what is junk. I won't be racing, but will like the bike to be agile and fast feeling.
