The best long johns in my experience are silk. I got them at MEC, but you can get them at LL Bean or REI. They are light, warm and will stretch with you as you move.
James, seems Poly Pro is out, I am still figuring out best option to layer, I am now focusing on merino wool or fleece as a mid layer.
