I'll complicate it further: I'm 5'11" with a 30" inseam (yes, I'm a freak) and my Ridley X-Ride is a 52cm that fits like a 54cm.

A cross bike should work fine as a gravel bike. Just find out how much tire clearance you're working with. You might want to run as big as 40mm and a dedicated cross bike might only fit up to 35mm. The geometry will also be a bit twitchier, which might get unsettling on a long, fast descent.
