More importantly I don't think Shimano has a road cassette with 34t. Ultegra long cage rear derailleur officially supports up to 32t. Could you put a mountain bike cassette on and make it work with 34? Maybe but I wouldn't. Honestly can't imagine needing more than 34/32 gearing to get up any mountain
And yes, every major brand has a carbon endurance bike with Ultegra. Defy would also be a nice choice
