By the way, don't be afraid to use wide road tires. You can get Conti Grand Prix 4000S IIs in 700x28, which will be at least as fast as the skinnier versions and provide better comfort on chip seal. I also hear great things about Compass tires which are available in sizes up to 700x38, but I haven't tried them yet.
