Many years ago I rode the Wimberly Hillacious. It was an awesome route and yes, very hilly. (for a Houston boy anyway)
Don't know how the area has developed over the years, but I remember thinking it was some of the best bike riding in Texas. Can't help with specific routes though. Google Wimberly Hillacious and see if any old route maps will pop up. Have fun!
