Many gilets come with mesh or highly breathable fabric on the back and windblock on the front.
I own two
Morvelo Hemisphere gilets and an Arc'teryx jacket with wind block front/breathable back. They work excellent.
The Castelli Perfetto is another vest with open back. I'm really insterested in the
7Mesh Synergy Jersey which is the same. Both are cost prohibitive right now.
But yeah, I would never wear a full windblock gilet or jacket.
