While the portion between Big Sur and Limekiln is out for now, these sections are nice rides too, though isolated from one another:

Ragged Point to Morro Bay.
Gaviota State Park to Ventura (actually Hwy 101 and frontage roads, but mostly isolated bike trail, a lot of nice ocean views)
San Francisco to Santa Cruz

And of course north of San Francisco you could ride the 1 between Mill Valley/Stinson Beach and up past Ft. Bragg. That's a good long stretch. Unlike the southern side there aren't lot of famous towns and landmarks along the way, but there's still an abundance of natural beauty and if you need hotels, they will be cheaper up there.

Also, from Monterey you could head to near the 101 via Carmel Valley and reconnect with the 1 around Cambria or Morro Bay or maybe take the dirt roads all the way down to Jolon, and work your way down via the eastern side of the Coastal Range. It would be hilly and hard work, but scenic.

With any of these rides, going north to south is very likely to be less work!
