It all depends on the type of fork. If it's an air type, check to make sure it holds the air inside. Check seals for any fluid leaks too. If it's spring and/or elastomers, check that the rebound is still good. Elastomers die out after some years. Specially if a bike is left outside in the elements.
I'm no expert so I'm sure someone else here has better tips.
