Yeah, the saddle setback was an issue for me as well, and tends to be with 74° ST's. My SLT never felt like a wet noodle, thankfully. If you find a fork with a 2.75" rake or so, I think that should get you into the 30s for trail. Likely plenty of 70s bikes that would accommodate that request. Or you could have your existing and matching fork re-raked I suppose.
