I've never used it in that application so I really can't say for sure. Two pieces attached together to form a knife sheath are pretty solid. I think if I was doing it I would start with a thin layer and go from there, maybe 0.060. If that didn't provide enough support then I would add a 2nd layer and attach them together using sheath rivets or Chicago screws (assuming this will be under an insole). You could even mix thicknesses to fine tune the flex and support.
