Most of the 80s brakes will work fine for 27" wheels- as far as going to 700c I've had luck with the DC981, Suntour XC Pro and the Shimano "Deore II" MT-62. The Shimano XT M732 brakes will work as well.

Since the XC Pro brakes work- that would mean the variants of that should work as well- the DC986 and 987 and the Ritchey cantilevers.
