I also built up my Vitus (Carbone) as a "Tout Mavic" build when I first got it.
Like this beautiful build by Peter shows, the Vitus bikes just look perfect with a full French Mavic component group. Much better, aesthetically to me than building them up with a Shimano group (DA and 600), which was actually a more common thing done with Vitus framesets in the 80's.
My Carbone still has the 851 SSC Mavic derailleurs on it, but I have since replaced the brakeset with a CLB and the Mavic 500 hubbed wheelset with Roval Aerodynamics for my on-going weight weenie build program with the bike.
