My salads have been a little flimsy, lately. I got kinda tired of my
avocado, black/pinto beans, hard-boiled egg and lately have been doing goat cheese, dried cranberries, nuts, etc. Good, but not as substantial. Some beet would kick it up a notch.
And now that I think about it, my
nut snacking has been non-existent lately - I usually have almonds and stuff on hand, but haven't for a few weeks.
