Well, as an owner of 2018 Escapade I'll vote for Jamis, of course. :-)
Proper full Shimano gravel groupset (unlike Cannondale that doesn't have 105 crank), mount points, looks IMHO way better.

I can tell you right away where Jamis saved money:
- wheels: I bet they will be heavy - mine are ~ 2100 g + these wheels use outdated 6-bolt mounts for discs;
- crank: GRX FC-RX600, 46/30T instead of GRX FC-RX810 48/31T;
- cassette: 105 instead of Ultegra (doesn't matter much, just a slight weight penalty - and once it wears out you'll need to replace it anyway).

As for 1x with 40T: for me such bike will be unusable on the road - 40x11 highest gear is WAY too low.
