Do you need/want a dynamo? That's useful for running lamps or charging batteries while moving, but I'd skip it unless I was building a long distance tourer.

edit to add:
High spoke count wheels aren't absolutely necessary, whatever weight you are. That's old wisdom from the era of box section low profile rims, which flex more than modern rims. Spokes are likewise not going to hold you back much, that's a job for air resistance at speed. If you have doubts, you can see if the wheels you're considering have a weight limit from the manufacturer.
