Like Steve B. mentioned, the feature is called gear position control and it can't be disabled if you've got 52-36 or 50-34 programmed up front. The setting, and "protection", is there to avoid low chain tension not cross chaining. Easy enough to tell E-Tube you've got larger chainrings and disable gear position control, or you could just...not cross chain. Choose your own adventure.
