Any shimano style 11sp mtb cassette will work on your 8-9-10 sp hub.
10 vs 11 really just comes down to the range and gear spacing YOU want/need. Nobody else can possibly answer this question for you.
For the overall range.... Best thing to do it figure out what the highest and lowest gear ratios are that you used with your 3x7 setup, and go from there. Or if you tell us we can help you with the math to figure out how that translates to 1x.
As for gear spacing.... are you OK with the spacing between ratios getting wider than you have with your 3x7?
Are you using this strictly for trail riding, or for a mix of trails and roads?
Without answering the above questions, you may as well be asking people what shoe size they like.
