+1 on Sedona. Just returned Sunday from a 3-day trip there. It's beautiful, has many resorts (two of which are less than a year old), and has plenty of rides and/or hikes. Of course, the terrain might not be different enough from CO for your taste.

My friends who live there bought a copy of a guide to local bike trails written by a wrench up in Flagstaff. He rates the local trails using a "pucker factor" system. Their first ride was on a trail he rated as "no pucker" and it scared the heck outta both of them. Admittedly, neither is a very technical rider, but the description sounded pretty scary.

If you're interested, I can get the name of the book.
