The first time I tried it, I pulled my hands off the handle bars, started to do it, and chickened out and quickly grabbed for the handlebars. I tried again and did it just fine. You don't want to be going too fast so you don't need to run after the bike, but you also don't want to be going so slow that the bike won't slide out from under you. It's really not very difficult to do.
