On crankbrothers pedals I think you have the option of 15 or 20 degrees depending on how you attach the cleats onto your shoes. Look in the owners manual on how to attach the cleats depending on how much you want. It is pretty simple to adjust.
there's a difference between release angle and float. You're talking release angle.
CB pedals have 6 degrees of float, regardless of the release angle setting.
