I've been through the whole process of figuring out the best options for carrying stuff on the bike, and it's a never-ending evolving thing.

I use the Topeak bag with side pockets (not built-in panniers) 100% of the time, I think of it as the boot of my car and only take it off when the bike is left locked up somewhere. I also have a pair of Deuter panniers which I use only when I need them. I have 2 trailers, one for hauling the kids and one for bringing home the weekly grocery shopping.
