What are cat I-V?

I'm just trying to figure out what these Cat races are that everyone talks about. I do know a crit from road race but beyond that I'm lost. There is more mountain biking around here than road biking by far so there are few, if any, road races and only a couple organzed road rides that I know of. Just came over from mtbs, interested more in road racing than crits.

Cat = Catagory. So Cat 1 races are for the top riders, cat v are the oppersite. These races will include road, crit & stage races. If you are starting out, you are likely to start in cat IV & V races. You gain points by finishing high. Gain enough points and you jump up a catagory.
At least this is how I remember it 10 yrs ago when I was racing

USCF has catagories (cat) You start as a cat 5 and work your way to cat 1
You can find the rules and how you work your way to different catagories at https://www.gnofn.org/~nobc/uscf.html in the classes and catagories section on the left
