Tonight is the last night that Spawn1 is home before going off to college. I'm thinking about what to make.
This past weekend I made his favorite: Pork Loin Country-Style Ribs. With it was other stuff he loves. It was a huge hit.
On Monday we took him to a local place called "The Warehouse" that he likes. I like it, too.
Last night was horrible. It was ribs (Spawn1's favorite), but take-out and they truly sucked. The fries were good, though.
Shrimp scampi is also high on Spawn1's list of favorite dishes, so maybe I'll make that.

Shrimp is peeled.
Some left over white wine is in the fridge for the scampi saute.
I made a 1.5 times batch of my tapenade (sundried tomatoes in oil, Kalamata olives, pistachios, flat leaf parsley, garlic, thyme, balsamic vinegar thrown in a Cuisinart) because we were running low. It is almost like eating dessert.
All the fixin's for Caesar salad are at the ready. I'll let Spawn1 put it together because of two things: he likes to do it and he is good at it.
Tonight is a very tasty dinner that is easy, not that much money, and delicious. Too bad it isn't all that healthy.
The only way to screw it up is to over/under cook the angel hair pasta. That is one element that takes a careful eye. I'll take charge of that. And angel hair pasta is essential to the dish. Other pastas are much too coarse.

Went to the farmers' market today and bought some plums from a farm just outside my hometown. So sweet, right down to the pit where there's nip of tartness. Heaven.

Just cracked open one of my bottles of dry mead made last year. First one I have tried. Pretty darn good - I prefer the slightly sweet stuff but meh - booz is booz and homemade booz is best!

Well, I've figured out one good lunch that's easy to make for the week, that Tuna salad sandwich I linked to, with the yogurt instead of mayo.
Now I need something else that's easy to make a bunch of for the week, so I'm not eating the same thing constantly.
also, the weight is coming off. I've lost 8 lbs in 6.5 weeks, down to 186.5. Still got about 16 lbs to go, probably around 14 more weeks. Sometime in December, in time to start ramping up intensity in January without having to diet.
Now I need something else that's easy to make a bunch of for the week, so I'm not eating the same thing constantly.

Flatballer, I have a few of those things that are quick and easy to make, that I bring regularly that I'd be happy to share with you (tuna sandwich is one of them, mine is: pickles, red cabbage, mayo, mustard, shredded carrots, capers, dill, sprouts). Do you have a refrigerator and microwave at work, or are you limited to sandwiches?

I hear you; I have a few one-pot meals that make a ton of leftovers that I eat all week.
1. Quinoa, black beans, corn, tomatoes, cumin.
2. Whole wheat cous cous, broccoli, cherry tomatoes, feta cheese, pine nuts.

Also, my diet took a detour to the Green's hot dog cart today. They're a Charlotte staple, so I treated myself. I was on my way to Subway, but got distracted.
So today is hot dog day, with mustard, sourkraut, and chili. Delicious. As long as I ride tonight I'll be fine.

I went grocery shopping yesterday.
Already have 2 huge packets of chicken thighs ($0.88 a lb!) might buy 2 more and freeze them if I cook this one by the weekend's end.
Bought: Mango's, red+green squash, blackberries/raspberries, and Oj.
Need: Fresh basil and ginger. maybe some kind of cheese. Probably not.
Desired outcome: Make slightly undercooked hot mango salsa. Stuff into sliced chicken breast. Add a hair of Oj for moisture. Wrap in foil and bake in the oven for 20-30 mins.
End result: Profit?

Just finished dinner: whole wheat rotelle, shrimp, cherry tomatoes, zucchini, yellow squash, and asparagus, with home-made pesto. Most of it local. It made two days of leftovers (for each of us!) too.

"Love of my life" and Spawn1 are on the road heading off to his first year in college. I'm home with the carnivore that is also called Spawn2.
It will be beef burgers, but at least they will be low fat/lean burgers. Blech!
And some kind of prepackaged oven fries. Double-Blech!
Now it is time to fire up the grill.

damn. Gonna be way over my diet today, no ride. I'll be at the maintaining calories today instead of the losing.

my first post here...i have decided to start eating better now in preparation for our fall tt series and next season...and just for health of course.
dinner: salmon pre seasoned from Tjoes. Bahsmati rice. can of fresca soda citrus flavored.
dessert: nutella on crackers washed down with jumex. it was my first time using nutella. shoulda used milk as the chaser. did not know it was so chocolaty.

I'm sort of opposed to salmon..
Most of it is farmed these days, and it's really hard to tell if you're truly getting wild salmon, unless you go catch it yourself. The farmed stuff is often injected with food coloring to give it that pink color that people associate with salmon (salmon get it from eating crustaceans, but farmed salmon don't eat crustaceans). I'm not entirely sure eating food that's been given a bunch of food coloring to make it "look natural" is really healthy..
Nutella though gets two thumbs up. Try some on top of slices of pineapple or strawberries, or in a homemade crepe, yum!
