We have some left over sauce from Christmas dinner (the sauce is apricots, prunes, apples, shallots, butter, ruby port, pork pan drippings thicked with arrowroot powder), so my wife asked me to cook a pork tenderloin. I really think she wants me to cook that so that I have some left over pork for making escarole soup, but that is another story. The tenderloins are marinading in lime juice, ginger and teriyaki sauce.

Water is on the boil for making potato salad. Pretty standard fare, except I put in a lot of lemon zest and juice.

Also making sautéed chard with pine nuts and craisins.

Small change in dinner plans. The red/rainbow chard I bought was OK, but there was a ton of organic rapini at the farmers' market. I often get some for making rapini and sausage, but this time I bought extra to add to the greens.

I really wish that I could get my wife to like beet greens. She has bad childhood memories of beets.

And I wish that she would open up her palate to goat cheese.

However if these are my the only type of complaints I have in my marriage I consider myself lucky.

A couple of years ago I was in Chicago visiting my older sister and I made the most amazing beet greens and goat cheese offering. With walnuts. It was awesome. I had to go to three different markets to get the ingredients I wanted exactly. I don't remember what I made for the carnivores, but the greens were memorable. I'm guessing I made the meat eaters some sort of pork chop.

totally eff'ed up my risotto.

Failure 1: vegetables went bad
Failure 2: chicken went bad
Failure 3: used turkey meatball instead for protein

Result: the thing tastes a bit gamey... grrr. Lesson learned: don't take the ingredients out of the freezer until 12 hours before...

I am going to cook all new stuff for a while. Tonight:





Cod with leeks, tomatoes, lemon, and thyme. Served (to myself) with whole wheat cous cous.

Last night was ginger/honey/soy glazed salmon with green beans, tomatoes, squash, and quinoa. It was also very good.

Stepdad and I made chili tonight. There was some disagreement about how many hot peppers to put into the chili, I supported tossing more in than he did. When it was done my mom and stepdad thought the chili was a bit on the spicy side, I didn't think it had enough kick. heh

are those artichoke hearts? i love those! well, day after wrestling meet = eating everything in sight and not stopping till you get sick. i won both my matches so i celebrated by eating 6 doughnuts haha
