If you are skipping on the jump, then you are throwing your body forward too much, wasting valuable energy. Many sprints are won on the jump. That's how I won most of mine. Try doing some sprints in the little ring to work on your jump and your body position. The little ring won't give you as much resistance and thus you should not be so prone to throwing yourself forward. If you think too much you'll look great but you might lose the sprint. It all has to come naturally, and that takes time and practice. I never had a coach or even a higher category mentor, I had to figure this all out for myself. You will too. Best of luck.

I've seen a lot of young guy sprinters that are quite successful at Cat 2 and above that have just horrible gear selection and "stroke" during their sprints. They are usually over geared and try to drive through the bottom of the stroke.
I have also seen some that have great technique.
"Form" sprints are a pretty good training tool, but simply going on fast group rides spinning instead of mashing does the same thing.

IT is a matter of form. If you know the finish, plan your sprint half way through the race. Sort out the gears you will probably use in the final lap including through the final two turns.
Sometimes you should drop a gear heading into an uphill sprint which will allow you to get your leg speed up and pass the guys that start off over-geared. Then pop them down one at a time to hold them off. Simple.

I had this problem in a few crits in the final sprints and I eventually tried smoothing out my pedal stroke and it has worked ok so far.
