any racers of non-euro descent in the european peloton

has there been any foreigners (non-US), in particular, asian folks picked up in the past by some team that was in the european peloton?

just curious

Not to my knowledge. However, there was the Japanese rider who held the world championship in his track event for 10 straight years. As I recall, he could have ridden in the pro peloton, but would have taken a huge pay cut (from what he makes racing the betting circuit in Japan) to do so.

Wait a minute...might there be someone of Asian heritage on one of Postal's lesser teams I have a vague memory of such, but it could be entirely off-base

There was a Japanese rider in the Tour back in 1996, rode for Polti.
There are a handful of central and South American riders over there.
