Removing coaster brake?

Okay, I've caught the single-speed bug, and I'm planning to convert my old 10-speed. I'd like to replace the rear wheel with a less-dished wheel made for a single speed freewheel--but so far, the only single-speed wheels I've found have coaster brake hubs. So--here are a couple of newbie questions:

1.) Is there some place I can get a single-speed rear wheel without the coaster brake?

2.) If not, how hard/feasible is it to remove the coaster brake mechanism?

3.) Or am I asking the wrong questions here? (I'm new to this single-speed concept.)


Note: my current wheels are old and dinged-up, so I'd like to replace them anyway.
