+2 on the deep v's..
I have many wheelsets, Mavicx Opens Pro, CXP 33's, Deep V's, Gel 330 Tubulars and the deep v's have the best lateral stiffness of all the wheelsets.. Open Pro's are a good 2nd choice, a little lighter than the deep v's. It sounds like you need lateral stiffness.
I would go for the 32/36 combo like said above for the best results..
