HR question

Hello folks. Long time listener, first time caller.

Question about HR during long rides to build aerobic fitness. What is the rationale behind riding at 60-70% of max HR during long rides? To limit intensity so that volume can be increased?

I did a 2.5 hr ride at ~85% of HR max. Would I have been better off at 70%? Is there a physiological adaptation at lower intensity that reduces with higher intensity?
