Selle Italia makes a good saddle in a variety of choices, and prices.

And if you pick a saddle that is too tough on the buns, they even sell gel saddle covers to remedy the situation! Covers are available in black, blue, red or white.
Have used their minimalist SLR (135 grams ($100+) with 5 grams of padding. Rides great if you like a very hard saddle; I can tolerate it real well til about the 40 mile mark and then my sitzbones don't want to sit any more!
