Selle Italia makes a good saddle in a variety of choices, and prices.
From the superlight C64 (weighing 64 grams) with a $200 plus price tag to Selle Italia Nitrox Gel at about 1/4th the price, but four times the weight. And if you pick a saddle that is too tough on the buns, they even sell gel saddle covers to remedy the situation! Covers are available in black, blue, red or white.
Have used their minimalist SLR (135 grams ($100+) with 5 grams of padding. Rides great if you like a very hard saddle; I can tolerate it real well til about the 40 mile mark and then my sitzbones don't want to sit any more! The flagship Flite comes in a variety of densities/designs/weights, inluding male/female designs.
Italians seem to have their act together when it comes to saddle choices.
