Why not both? I unclip out of both pedals when I approach a stop. I've never had a problem with it.
If you clip out of both at the same time while rolling don't you feel a little wobbly with just your butt in contact with the bike? My saddle is high enough that if I did that my feet wont touch the ground at the same time.
