I have also ridden in the winter with a Brooks saddle. It seams the first couple of minutes may be a little chilly (I store my bike in the garage) but it will soon warm up to body temps and be fine. I used Proofide on mine and never had any problems. I also used a plastic cover but for a different reason. The oils would come off on my pants when I rode to lunch!
