maybe stop calling it "training?" Since you don't race and all, just change the focus, perhaps. Ride to eat AND lose weight. The fitness you need for said ride will come naturally.

I know what you mean by feeling burnt out. I just have no sympathy for you being in Florida and being able to ride year round .. this might be one area having all 4 seasons helps. i.e. not being able to ride outside for a few months forces you to do other things and forces you to .. miss the bike.
