The paul's use standard road levers, as all canti's do, so you can choose any road brake lever.
You got the tektros, cane creek's version of the tektros, shimano sumpim'-or-other and some dia compe models. I don't like dia-compe because I don't like how the cables get routed into them. The shimano levers are very nice if you like a more traditional shape (not shaped like brifters at all), the tektro's are bulkier and apparently are shaped much like campy ergo levers, and they have built in quick release buttons which is nice.
I like the tektros a lot except a pair I had, somehow the binder bolts got stripped and I could not remove the lvers. I had to cut my bar in half to get them off the bike. I didn't cross-thread them either, they were installed and I was setting up the bike so I was loosening and tightening them a few times, and the last time I did it the bolts stuck and just caused the nuts to turn around on the binding band. So... tektros are nice but watch the bolts(?).
The only time you need to worry about non-standard is when you're using full-sized v-brakes in which case there are only 2 road brake levers out there designed to work with them.
As for pads, I dunno anything about ceramic. I'd go to kool stop's website.
