Most LBS's won't likely have 27" performance tires in stock. There aren't many options available, and not many bicycles need them today. Nashbar and Performance Bike generally have something decent in stock, and Harris Bike does too. FWIW, a 700c tube WILL work just fine in that 27" tire.

I started commuting with some of those Wally World 27 tires in an old Fuji 12 speed. Heavy as bricks, and a bit wide, by modern standards (about 32mm), but I never had a flat on 'em. They rolled just fine at 95psi.
