+1 on the DSLR.

Perhaps consider a newer Canon point and shoot as well, so you have as detailed pictures as you can, if using that camera? Something like the SD770IS that has 10MP, but is thin and easy to stuff in a jersey pocket. Cameras cost, but the images you take are priceless.

Don't forget to take a lot of memory cards. Some people say take 2x what you need. I'd go with a wider margin that, personally. Take a LOT of CF and SD cards with you. I think the EOS 300D can go up to 8 gigs. I'm not sure how big a SD card the SD360 can take, so guessing up to 2GB.
