Once I had a "touring" (old Raleigh) frame and a "race" (old Bianchi) frame.
The difference was *huge* mainly due to the overall wheel base.

The touring bike (with long CS) was smooth and slow to turn, like driving a RV.
Where as the race bike was very nimble and zippy like a sports car.
I'm reiterating ...

I am not sure how I can quantify my remarks for practical usage.
CS geometry makes a big difference on 700c bikes; just like BMX.
I prefer shorter Chain stays, that's my experience.
