I rode in the Santa Cruz Tour d'Organics last year (they don't seem to have it at that location this year).

I thought the food selection was pretty good. (Disclaimer: I am vegan and barely get anything to eat at other rides besides what I bring with me.) Everything was really fresh and tasty.

Besides the aforementioned fruit, there were plenty of energy bars, baked potatoes (with things like hummus, black bean dip, vegan pesto) to go on it, peanut butter and banana sandwiches, and they had a full entree for lunch partway through the ride (I didn't try it as I wasn't hungry) and a full meal afterwards (I'm not positive, but I think the meal afterwards was a tofu stir-fry with rice and some sort of baked dessert).
