I have a Dimension adjustable stem, not quill, on one of my bikes and it works pretty darn well. The angle adjustment is sort of geared, so it locks down very securely. Dunno anything about the adjustable quills. Looks they'll accommodate 25.4 or 26mm handle bars, so you're in business as long as you don't need to use an oversized bar.
