Why not go fixie or singlespeed? A ss freewheel and most fixie cogs will thread right onto that hub, no muss no fuss.
If you do go with gears, go with friction shifting - the SunTours do that via a nice clicky ratchet. You can run 5-6 or 7 speed freewheel that way.
